These are fatty acids with an aliphatic tail that contains between 13 to 21 carbon atoms. They are neutral compounds and are very hydrophobic.
Arachidic acid has a chain of 20 carbons. Its melting point is 75.4°C while its boiling point is 328°C. The density is 0.8240 g/cm3. It is a white and crystalline compound that is insoluble in water. Arachidonic acid has a molecular weight of 304.5 g mol-1. It is an unsaturated essential fatty acid. Arachidonic acid is present in human and animal fat, liver, glandular organs, brain, and in animal phosphatides.
It has a boiling point of 169°C, a melting point of -49°C, and a density of 922 kg/m³. Its molar mass is 304.47 g/mol. Its IUPAC ID is (5Z,8Z,11Z,14Z)-Icosa-5,8,11,14-tetraenoic acid. It is soluble in ethanol. Moreover, it’s a polyunsaturated fatty acid with four double bonds. Generally, the addition of two additional carbon atoms to linoleic acid and further desaturation forms arachidonic acid.
Moreover, arachidonic acid is pro-inflammatory and immuno-supportive. In fact, it is one of the most important omega-6 fatty acids. Omega 6 fatty acids are present in legumes, grains, nuts, and seeds. It is also available mostly in the fatty parts of fish and meat.
